  1. Prepare a bowl for cherries before starting . This way you will collect all the juice they emit, and thus nothing will be wasted.
  2. After pitting, weigh the cherries to get the exact amount of sugar required. It is equal to half the weight of the fruit, so if 400 grams of cherries remain, only 200 grams of sugar are added.
  3. Then add lemon juice and sugar to the cherries, pour the juice into a bowl and mix well so that all the ingredients come together. Cover and set aside for about 1 hour.
  4. Put the mixture in a saucepan and cook over high heat until it comes to a boil. Then lower the heat to a small fire and continue cooking for 1/2 hour. Be sure to stir from time to time with a silicone spatula so that the sugar does not stick together.
  5. After this time, mash the overcooked fruit with a pestle. The final consistency depends on the preferences of each person. It can make a completely smooth jam or leave whole pieces of fruit behind.
  6. To check if your cherry jam is ready, put some on a saucer and lift it up with two fingers. If a thread forms between your fingers when you separate them, the jam is ready. Then take the pot off the heat and let cool.
  7. The texture may appear fluid, but it will become more fluid over time.
  8. To store it safely, sterilized jars must be used. This can be done by immersing the containers in boiling water for 10 minutes. Then keep them warm until used.
  9. Fill the jars with the jam while still hot, without filling them to the brim (leave a 1cm gap from the top). Spin it on and put it back in the pot of water. Simmer for another 30 minutes to eliminate any possible pathogens. This is how you pasteurize your cherry jam.

  1. The first step is to separate the egg whites and yolks from the cooked eggs. Squeeze the latter through a fine strainer.
  2. Then make a volcano out of the flour and place the yolks in the center. Then you need to add the chopped butter, sugar, vanilla and lemon.
  3. Mix well until you get a homogeneous paste and wrap in foil and refrigerate for about 30 minutes.
  4. After this time, sprinkle the work surface with flour and roll out the dough with a rolling pin. Ideally, it should be about 1/2 centimeter thick. Then form the cookies into a round cookie cutter or glass, about 5 cm in diameter.
  5. It is necessary to make twice as many cakes as you want to serve, because you will be putting them together in pairs with cherry jam filling. In the middle of the cakes, use the smaller mold (2 centimeters in diameter) to make a hole in the center of the cakes.
  6. Line a baking sheet with baking paper and arrange the pieces without holes. Then arrange the cakes with a hole on top and paint with a little milk for a lighter effect.
  7. Fill the well with a teaspoon of cherry jam.
  8. Biscuits should be baked in a hot oven at 170 degrees for 12 minutes. then remove from oven and cool.
