Delicious paella – two ways to prepare it

1. Paella Valenciana

Queen of paella and one of the most famous Spanish dishes around the world. People are often confused by the name “Paella Valenciana” as there are many types of rice in the Valencia region.

Traditional Paella Valenciana – as in the recipe below – includes rabbit meat, chicken and beans. It differs from paella with shellfish and mixed paella, which combines seafood and chicken.

Makes 4-6 servings

  • 2 cups of rice (400 g)
  • 1/2 red pepper (30 g)
  • Salt and pepper to taste
  • 4 chicken broth (1 l)
  • Medium size tomato (60 g)
  • 1 small sprig of rosemary
  • Extra virgin olive oil
  • 1/2 kg of chicken, cut into pieces
  • 1/2 kg of rabbit, cut into pieces
  • 1 handful of green beans (80 g)
  • 1/2 cup of white beans (100 g)
  • 1 teaspoon of paprika (5 g)
  • A bit of saffron (can be replaced with yellow dye, but is not recommended)

Preparation

  1. Fry the chicken and rabbit pieces in a paella pan (large deep pan) in olive oil.
  2. When the meat is lightly fried on both sides, add the green beans and stir for a few minutes, making sure it does not burn.
  3. Cut the tomato into small pieces and add along with the white beans. Then add the peppers and mix well. Fry for a few minutes.
  4. Then add the chicken stock, saffron, rosemary, salt, pepper and increase the heat.
  5. When the mixture boils, add the rice. You can also add salt to taste.
  6. Cut the red pepper into strips and add.
  7. When the water has almost completely evaporated, reduce the fire. Then cover with a lid or tin foil and cook for 10 minutes.
  8. If the beans are soft, turn the heat off, leave it for another 10 minutes and serve it to the table. This method of preparing paella is very simple.

Paella with seafood

Ingredients for 4 people

  • 2 cloves of garlic
  • 1 onion (60 g)
  • 1/2 kg of squid
  • 1/2 kg of fresh shrimp
  • 1 medium tomato (60 g)
  • 1/2 red pepper (30 g)

  • 2 cups of rice (400 g)
  • 4 cups of fish broth (1 l)
  • 1/2 cup of peas (100 g)
  • 1 sprig of fresh parsley
  • Olive oil, salt and pepper to taste
  • Yellow food coloring or a few strips of saffron
  • 1 handful of clams (150 g)

Preparation

  1. Start by cleaning and peeling the prawns. Be sure to keep the crusts and heads for the broth.
  2. Clean the squid and cut it into rings. Wash the shells with plenty of water to remove all sand.
  3. Pour olive oil into a large pan. Fry the peppers, diced tomatoes and onions, then add salt and pepper.
  4. Add the squids and crusts. Cook for a few minutes until the broth begins to form.
  5. Pour in two cups of rice and mix well. Then add four cups of the previously prepared shrimp broth. You can add some water to it.
  6. While cooking, add a teaspoon of yellow dye or saffron and cook for another 3 minutes.
  7. While there is still liquid in the pan, add fresh peas, prawns and chopped parsley. Add salt and pepper to taste.
  8. When the liquid is almost evaporated, add a few strips of paprika and prawns with their shells for garnish.
  9. Reduce heat, cover and cook for 15 more minutes, until the rice grains are tender. Pour olive oil over them and serve them to the table.
