As for its nutritional properties, the flan mass is made from milk and eggs. For this recipe, we chose skim milk as we want to make sure it is  low in calories.

It is important to remember that although skim milk is rich in calcium and iodine and has the same proportions of lactose and sugar as whole milk, it loses vitamins A and D in the skimming process. If you want these vitamins in your flan, use whole milk.

Meanwhile, eggs are nutritious. They contain high-quality, easily digestible protein and monounsaturated fatty acids. In addition, they contain vitamins A, B (B2, B3, B12 and folate), phosphorus, iodine and selenium.

We decided to use ricotta cheese instead of condensed milk and stevia instead of sugar to reduce its caloric content and make it a dessert suitable for diabetics. Of course, you can substitute sugar for stevia if you wish .

Ingredients for napolitano flan for 10 people

  • 2 1/2 cups of skim milk
  • 1 1/4 cup ricotta cheese
  • 5 eggs
  • 1 tablespoon of powdered stevia
  • 2 tablespoons of vanilla extract
  • A bit of vegetable oil (as much as you need)

Ingredients for caramel

  • 50g of sucralose
  • 3 tablespoons of water
  • Lemon juice squeezed out

Preparation of the napolitano flan dessert

  1. Preheat the oven to 180 ° C.
  2. Mix the skim milk, ricotta cheese, and stevia with a blender.
  3. Once you get a smooth mix, add the vanilla extract and mix again. Set aside.
  4. Prepare the caramel. To do this, put a casserole pot over low heat and add sucralose. Stir until the powder turns sandy. Turn off the burner and add water and lemon juice. Keep stirring.
  5. Sprinkle the flan pan or molds with vegetable oil.
  6. Pour the caramel and then the entire mixture into the pan. Cover with aluminum foil.
  7. Prepare a container of water in the oven. Pour water into it until you can cover 1/3 of the mold, then place it inside.
  8. Cook for about an hour at 180 ° C. Make sure that the water does not evaporate. If it goes down, add more.
  9. Pierce the flan with a toothpick. If it comes out dry, your napolitano flan is ready.
  10. Let the dessert cool so that you can smoothly remove it from the mold.

Additional ideas

  • You can use almond milk instead of skim milk (same amounts).
  • Decorate your napolitano with all kinds of fruit: strawberries, cherries, blueberries … whatever you want!
  • If you like dulce de leche or butterscotch cream, add a tablespoon to your flan!
  • You can replace the ricotta cheese with condensed milk. However, you should know that this increases its caloric value, as condensed milk contains a lot of sugar.
